Roasted Vegetables
This side dish is so good I always make extra. Subsitute different vegetables if you like or according to season.
2 japanese eggplants, sliced thinly
1 red bell pepper, cubed
2 zuchinnis, cubed
1-2 shallots, sliced
3-4 cloves of garlic, chopped
8-10 crimini mushroom, quartered
Combine all ingredients, coat with olive oil and cook uncovered in 400 degree oven until tender, stirring occasionally. Top with mozarella cheese if desired.
