Summer Salsa

I use to make this fruit salsa for commercial rafting trips when I worked in the kitchen packing lunches. All of the guests loved this salsa! I’ve trimmed the recipe down from serving 90 people to 8-12 people.

2 pounds fresh strawberries
1/2 fresh pineapple
1 ripe mango
4 green onion stalks
1/2 red onion
1/4 – 1/2 cup cilantro, depending on your taste
1 jalapeno
1 lime for juice

Clean strawberries, peel and core mango and pineapple. Dice all fruit, the red onion and jalapeno into small pieces. Slice the green onion and chop the cilantro. Before cutting lime open, roll on the counter applying pressure to “loosen” the juices. Combine all ingredients and squeeze lime juice over them. Mix together and let sit for 1/2 hour. Serve cold. This will keep well in the refrigerator for about 2-3 days.
